I’m all about quick and easy these days so this dinner is served at least once every 2 weeks. It’s a good thing my family really loves this meal.

I forget to defrost meat for dinner often. I either need to wait for something to be defrosted. Defrost it in the microwave, which I’m not fond of. Sometimes it means just changing my meal plan for the evening.

I never feel weird about defrosting smoked sausage in the microwave because, most of the time, the sausage is already cooked through and just needs to be heated thoroughly. That’s exactly what I do with this meal.

Cooking the sausage and peppers together with a bit of olive oil lets all the flavors join together. Pairing it with rice or potatoes is such a great filling option.

The easiest way to cut peppers is to cut the top off, pull out the insides, cut in half and rinse. You can cut around the stem to get every last bit of usable pepper. Slice the pepper into long strips.

The key to getting the most out of your peppers is to cook them until hot but not floppy. Cooked peppers should have a soft crunch. The longer you cook them the less nutrients you get out of them.

Smoked Sausage and Peppers

I slice the smoked sausage after defrosting and just toss it together with the peppers in the pan. Covering your pan allows for the heat to cook everything through and hold the heat to cook faster. The sausage and peppers can leave quite a bit of moisture in the pan so feel free to drain it half way through cooking.

This meal takes 10-15 minutes to cook depending on which side dish you are making to go with it.


  • 1 Smoked Sausage Link
  • 1 Green Pepper
  • 1 Yellow Pepper
  • 1 Red Pepper
  • Rice or Potatoes

Recipe for Smoked Sausage and Peppers

Smoked Sausage and Peppers

  1. Start your rice, potatoes, or side dish.
  2. Slice all three peppers into strips and place into skillet with a splash or two of olive oil.
  3. Slice your smoked sausage into bite size chunks and add to the peppers.
  4. Cook over medium heat until heated through and peppers are cooked but not limp.
  5. Turn down the heat until your side dish is ready.
  6. Serve and enjoy.
